Native to Los Angeles, California, Caroline Rae Green is a Professional Chef, Creator of Dalé Bars & Entrepreneurial Day Dreamer. 

Caroline graduated from the University of Notre Dame in 2011 with a Spanish Literature & Cultures Degree.  While always an avid eater since childhood, her passion began to grow as she discovered the joy of sharing delicious foods with others & she entered the food industry in her early twenties.

Meanwhile, Caroline discovered the importance of empowering herself with not only daily endorphins & positive food for the soul, but also bold functional ingredients & delicious flavor profiles. She created Dalé Bars with a daydream in 2013 while craving a delicious, yet sustaining snack to keep her energized while working. 

In order to level up her skills, she decided to make a fearless leap. After reaching supervisor roles in the corporate food industry (Panera Bread, Whole Foods Market), Caroline literally moved outside her comfort zone to Napa Valley & attended the Culinary Institute of America, earning her Associates Degree in Culinary Arts in 2019, a decade long dream.

Currently, Caroline resides in Napa Valley, working as a Kitchen Manager for La Saison Catering. The female-led team provides a variety of culinary experiences from wine-friendly catering throughout the valley to retail products shipped nationwide. She is a long-distant catmom to Malbec & Whiskey and enjoys endorphins, meal prepping, & beach adventures while trying to figure out the work-life “balance.”

Similar to the literary romantic concept of “carpe diem,” “DALÉ” represents more of a spirit to embody, a way of life - to live boldly, to seize the present moment & to live our best lives!
